Rose syrup: The beautiful pink color of this faluda comes from rose syrup (another key ingredient). Rose syrup is easily available here in the USA, and you will find it in Indian grocery stores. Instead of rose syrup, you can use rooh afza as well. Different restaurants and stalls give this falooda different names on their menu like royal falooda, shahi falooda, or falooda ice cream, etc. It is also spelled as faluda. Jump to: Soak the tukmalanga/basil seeds for about an hour, then drain and boil them for 10 minutes or until they are soft. Drain and set aside.

Let’s take a shortcut here and make it by combining milk and sweetened condensed milk. No need to heat the milk. So you’ll have chilled, sweetened milk ready in a minute.

What is falooda?

They come from the sweet basil or Thai basil plant, not to be confused with the basil you may be more familiar with that is common in Italian cooking. Refrigerate until chilled. Serve with a scoop of vanilla ice-cream (or any ice cream that you like). You can garnish with slivers of blanched almonds, or fruits like grapes. You can even garnish with pieces of colourful jelly. This Raspberry, Pistachio and Rose Swiss Meringue Buttercream was responsible for this serendipitous discovery. I remember asking Mr K to taste-test the frosting, which he did, and then stopped, reached out for a little more, tasted it again and then looked at me and said “this tastes just like falooda!” I told him it was rose water, not falooda syrup, but then when I tasted it, it hit me too! There was something that I added to my frosting (which I made using rose water) that made it taste like the falooda from our childhood.

The basil seeds used in falooda, also called tukmaria or subza, are similar to chia seeds but they are nutritionally slightly different. In falooda, they give a texture a little like bubble tea, but much smaller and lighter. They are often said to have a cooling effect, and the whole drink is certainly great for a warm day.
