Another key is using caster sugar. Not regular granulated sugar. Not powdered sugar. Caster sugar is very fine granulated sugar. Caster sugar is commonly used in British baking and it’s an all-around smarter choice than granulated. The reason is that the sugar crystals in granulated sugar are much larger and take longer to dissolve during baking and may not dissolve completely. Caster sugar dissolves more rapidly leaving a finer texture to the baked good. Possibly my favourite thing about Shortbread is just how versatile it can be. Be it cut into a variety of shapes; circles, fingers, petticoat tails, hearts…you can literally dress them up for any occasion! Or there’s the option of adding a little something extra; chocolate chips, ginger or Granny’s favourite of raisins soak in orange juice & drained, with some dark chocolate chips through them too. Shortbread can be dressed up (or down!) for whatever your needs. It’s even something that I have considered as wedding favours, when that day finally comes. It also wasn't as buttery as the other options, but it did have a light dusting of sugar on the top which I only really got with the aftertaste.

With the signature delicate crumbly texture and beautiful buttery flavour, shortbread is one of those biscuits that is both nostalgic and elegant. It’s right at home with a casual coffee catch up with friends, or an elegant tea party to impress! A very long time ago, biscuits were made from leftover baked goods which were repurposed into another form. You may remember I explained that “biscotti” means “cooked twice” in Italian, which is where the word, “biscuit” comes from. When butter began being added, these biscuits were no longer cooked twice, but the name remained. At this point stir in any add-ins if using (candied ginger, candied citrus peel, herbs, nuts, etc.) It may be but a simply biscuit, but we certainly have a fond place in our hearts for a good piece of shortbread.

M&S gives good competition - even if they are on the pricier side - with their all butter assortment and is definitely a worthy contender with their rich and buttery biscuit. Again, I would guess many people sharing other shortbread recipes have never even tasted proper shortbread (you don’t have to go to Scotland for that). Buy the best quality flour, cane sugar and most importantly, butter, to make the best biscuits you can make. You won’t be disappointed. Store the shortbread in an airtight container for up to several weeks. Its flavor and texture improves over time.

From 2014: I am incredibly honored and overjoyed to have been asked to be a judge in this year’s Scottish Baking Awards Competition, which will be held at Mar Hall Resort and Spa, near Glasgow, in September! As I was born in Scotland, it means so much to me to be able to participate as a judge in such a prestigious competition. Shortbread is very simple, very easy to make and once you’ve made it yourself there will be no need to buy it again! Shortbread is also a tradition for Hogmanay, or New Year’s Eve, in Scotland. It’s coming up, so why not make a double batch for Christmas and New Year’s Eve? It’s a great way to start the new year, with some Scotch whisky! (FYI: Scotch whisky is always spelled without an “e”.) Put the butter and sugar in the bowl of a food processor and blitz until well combined. Add the flour and pulse briefly until the mixture resembles breadcrumbs. We’re making Scottish shortbread the traditional way with just 3 ingredients: Flour, Sugar and Butter. Well, and a tiny pinch of salt, too. Nothing else is needed, no fancy ingredients, no flavor enhancers. The key to a good Scottish shortbread is the quality of the butter. That is what flavors the shortbread and the shortbread is only as good as the butter.

Essential kit

Creating little holes in the top of the shortbread helps any moisture escape from the dough so it cooks more evenly, this also helps create the very ‘short’ texture of the biscuits. In baking terms, 'short' means crumbly with a melt-in-the-mouth texture. It comes from using a high proportion of fat (or shortening) to flour and is also where shortcrust pastry gets its name. With layers of shortbread, caramel and chocolate it is the ultimate indulgence! Beat the butter, vanilla, and sugars. Using an electric hand mixer, beat together the softened butter, vanilla, powdered and granulated sugars in a large mixing bowl on high speed. It takes about 1-2 minutes for the butter to become lightly whipped.
