Wafts of rich dark fruits, almonds and vanilla are followed by a wonderful taste of fruit cake, digestive biscuits, honey and figs with a hint of chocolate, all topped off with a long and sweet finish. It has a good whack of peaty flavours (if you’re a peat nerd then you’ll want to know it comes in at 45ppm) that make it obviously smoky, but without totally overpowering all of the other flavours. We double cask mature: after some time, the spirit is transferred into a previously used single malt Scottish whisky barrel for finishing, which softens the oaky bourbon notes and allows a little more of a comfortable rest in the final stages of ageing.

Greg is very passionate and has put a lot of time and hard work into the development of his whiskey's and gin. Rather, the successful distilleries are trying to carve their own niche and, together, put English whisky on the map as a worthy product in its own right. Scottish whisky and Irish whiskey have been popular for many years, but it's time for English malts and single grains to shine. Although England is not well known for whisky production, distillers operated in London, Liverpool and Bristol until the late 19th century, after which production of English single malt whisky ceased until 2003.

Thus far, the group has applied for Geographical Indicator status, and is now working to create definitions for English whisky and English single malt whisky.
