I’ve been cooking this for years and my go-to recipe is that from Delia Smith’s Complete Cookery Course. There's something very primal about it and it touches a part of me nothing else comes close to touching. I appreciated this official cookbook for so many reasons- it's beautiful, for one, and Downton is one of my favorite shows of all time. A lot of the recipes use almond flour, dried fruits and nuts and alcohol, common ingredients at the time, none of which I ever bake with.More adventurous palates will also find a range of upscale options to choose from, such as a Charlotte Russe, created by famed French chef Antonin Carême, or Peaches Melba, one of Escoffier’s most-admired inventions. As someone who has watched the series myself as a fan, I did not expect that to be the case when I went to read this book. This charming cookbook also features a detailed narrative history and extols the proper decorum for teatime service, from tea gowns and tearooms to preparing and serving tea.As the Kedgeree and Prawn Curry have shown, many of the dishes have not aged well as either they have fallen out of fashion or in the case of the curries; they have been supplanted by more authentic ones that can be recreated at home due to access to the ingredients that can easily be found in supermarkets. This is a lovely book with interesting and informative text, plus wonderful photographs and recipes that demonstrate the “Downton” era both upstairs and downstairs.
