The distillery features a still house, tun room, mash house and mill room, which are housed in the main building. It is said to be one of the few distilleries in Scotland to own and manage its own loch.

From bourbon vetiver and damask rose to pomelo and kaffir lime, the botanical list of Theodore Pictish Gin is like nothing else on the gin shelf. A flavour profile like no other Whereas the Drinking of Spirituous Liquors or Strong Waters is becoming very common, especially amongst the People of lower and Inferior Ranks, the constant and excessive Use whereof tends greatly to the Destruction of their Healths rendying them unfit for useful Labour and Business, Debauching their Morals, and inciting them to perpetrate all manner of Vices. . . 2 Base notes of bourbon vetiver add a smoky, woody aroma with hints of vanilla, and oolong tea delivers further green notes to complement the citrus and pine. The distinctive combination has a long finish on the palate, with delicate rose returning in waves. This intricate and delicate elixir is the product of a perfumer and two master distillers, one British and one French, combining old and new techniques. Greenwood is also planning to launch a mezcal, Armagnac and Bourbon by spring 2019, as well as a “rare” Scotch whisky by autumn this year.Brosseau followed his nose as he sought to create a Gin that would tell the story of the Pictish people, using botanicals that have scattered their way across Scotland for centuries, as well as some inspired by the adventures depicted in the work of Theodore De Bry. Using both typical stills and a rotary evaporator, the botanical make-up of the Gin is not only vast, it’s complicated. The gin is made using 16 botanicals including pine, Damask rose, pomelo and bourbon vetiver, which have been distilled in a multi-stage process using an old charentais still alongside a rotovap to extract the best flavours and aromas from each.

As Barth began studying the Picts, he realised that he would never be able to discover the truth of their lived experience. He loved them all the more for it, and decided that they would provide the basis for his gin: bold, mysterious, adventurous, brave.

Their magnificent body-paint and talent as craftsmen may seem at odds with their alleged fierce nature, but we appreciate this inherent duality. Theodore pays tribute to this dualism with a bold and characterful gin that embodies the Pictish spirit and it is for anyone who is looking to whet a curious appetite.’ Hogarth's scene is set in the slum district of St Giles' Parish, Westminster, where in 1750 at least every fourth house was a gin-shop, and numerous brothels and places for receiving stolen goods existed. The only thriving establishments appear to be the pawnbroker's where the prosperous looking owner 'Mr Gripe' (the name was slang for a usurer), is profiting from the search for funds to support the more profligate habits of his clients, and the distillers. This state of affairs accords with the observations of a letterwriter to the Gentleman's Magazine in 1743, who wrote: Then will come the icy clarity of juniper and pine, two flavours which enhance each other. Lavender is at play here – though it’s so subtle you might not even taste it. “Quite often a distilled botanical or essential oil smells very different from the plant itself,” he says. “Lavender is one of the best examples of that; in our case, it gets a very herbaceous, green quality rather than the usual floral aroma. For us, that’s what links the green notes to the rose and chamomile, which is really the heart of the gin.”

These botanicals include pomelo, pine, damask rose, honey and oolong tea, creatinga fresh and elegant gin with a floral heart and warm, rich finish. The new gin is said to be ‘Scottish by birth and Pictish by nature’. Unfortunately, though, these important debates are being spoiled by a vocal minority of trolls who aren’t really interested in the issues, try to derail the conversations, register under fake names, and post vile abuse.

It’s a cluster of process and balancing act to say the least, but the team assembled to create Theodore Pictish know their botanicals inside out. The initial help and outsourced production comes in the form of Audemus and Thames Distillery along with a consultant perfumer in the picture to ensure a delicate balance that may stray from the typical path and that may even hover over oblivion, but that never, ever loses its footing.
