Note: I used dried shiitake mushrooms for this recipe, but I've also used a mix of dried mushrooms in the past to make the seasoning blend. Trader Joe's version uses a combination of dried porcini mushrooms and dried white button mushrooms. Feel free to use whatever you can find, or whatever you have on hand.
